Burrito Bites
(Leon County)

10-ounce can Rotel tomatoes
1 cup uncooked instant rice
1/3 cup water
1 teaspoon cumin powder
1 teaspoon garlic powder
1 small bell pepper, diced
2 green onions, chopped
2 cups grated cheddar cheese
15-ounce can refried beans
10 flour tortillas (6 to 8 inch)
1/2 cup salsa
1/2 cup grated cheddar cheese


Mix the Rotel tomatoes, rice, water, cumin and garlic powder in a saucepan. Bring to a boil. Simmer one minute. Let set for 5 minutes. Stir in bell pepper, green onions and cheese. Heat the refried beans. Heat flour tortillas in skillet.

To make burritos -- spread each tortilla with a portion of refried beans and rice mixture. Roll up. Slice into small pieces, top with salsa and cheese.

Yield: 12 servings.
