Zucchini Carrot Bread
(Atascosa County)

3 eggs, slightly beaten
1 cup salad oil or canola oil
1 1/2 cups brown sugar, packed
1 cup grated zucchini, squeezed and packed tightly
1 cup grated carrots
2 teaspoons vanilla
2 1/2 cups flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon table salt
1 tablespoon cinnamon
1/2 cup raisin bran
1 cup chopped pecans, walnuts mixed

Preheat oven to 350 degrees. Prepare 1 well greased loaf pan. In a large bowl slightly beat eggs with oil. Stir in sugar, zucchini, carrots and vanilla. Stir in flour, soda, baking powder, salt and cinnamon. Blend raisin bran into squash mixture and add nuts last. Bake at 350 degrees for 1 hour.
