Fideo con Carne
(Vermicelli with Meat)


5 servings: 3/4 cup per serving

Diabetic Exchanges: 2 Meat, Medium Fat, 1-1/2 Starch/Bread & 1 Fat


1 pound round steak or lean hamburger meat   Chopped onion
2 teaspoons salt   1 cup canned tomatoes
Black pepper   1 garlic clove
1 5-ounce package vermicelli (fideo)   Pinch of comino (optional)
1/4 cup shortening   Water


Remove all fat and cut round steak in 2-inch squares. Place meat in a large skillet and add salt and pepper. Cover the skillet and cook over low heat for 15 minutes. In a separate skillet, fry the vermicelli in fat to a golden color. Drain all fat from vermicelli and pat dry with a paper towel. Add chopped onion to the meat and cook for one minute. Add crushed tomatoes and other seasonings. Combine the vermicelli with the meat and sauce. Add 2 cups of water; bring to a boil, cover, and simmer for 20 minutes or until vermicelli is tender.
