Carne con Papas
(Meat and Potatoes)


6 servings: 3/4 cup per serving

Diabetic Exchanges: 2 Meat, Medium Fat, & 1 Starch/Bread


1 pound round steak   1 cup tomatoes, crushed
1/2 teaspoon salt   1 garlic clove, crushed
1/4 teaspoon ground black pepper   1/8 teaspoon comino
4 medium potatoes, raw   1 cup water
1/4 cup onion, chopped    


Trim off fat from round steak and cut in 1-inch strips. Place it in a large skillet and add salt and pepper. Cover and cook over medium heat for 15 minutes. While meat is cooking, peel the potatoes and cut into small cubes. Add the potatoes to the meat and continue to cook for 10 minutes, stirring occasionally. Add chopped onion, crushed tomatoes, garlic, comino, and water. Simmer until potatoes are tender.
