Chinese Mustard, (Bok Choy)
Nutrition Information: Bok choy is low in calories and a good source of vitamin A and C. A 3 ounce serving contains about 13 calories, 75 percent of the RDA for vitamin C, and 33 percent of the RDA for vitamin A.
Preparation - Wash thoroughly and cut or tear leaves. Steam in just the water that clings to the leaves after rinsing in a covered saucepan for 5 to 8 minutes. Season with butter, pepper, salt, or fresh lemon or lime juice. Both the stalks and leaves can be stir-fried in hot oil seasoned with fresh garlic. Stir-fry for 5 minutes or less.
Microwave Instructions - Wash about one pound bok choy and cut the ribs diagonally into thin slices. Place sliced cabbage and 2 tablespoons water in covered casserole. Microwave on high 7-13 minutes. Stir every 4 minutes.
