TACO SAUCE WITH JALAPENOS

3 cups tomatoes - peeled and chopped
3/4 cup onion - chopped
1 1/2 teaspoons salt
3 garlic cloves - minced
1 1/2 cups vinegar
3 cups jalapenos - seeded and finely chopped
Combine all ingredients, bring to a boil, cover and simmer 5 minutes. Pack in hot, clean jars. Use all liquid and divide it evenly among the jars. Adjust lids. Process in water bath for 30 minutes. Start counting processing time when water returns to boiling. Yields about 4 pints or 8 half pints per recipe.
